PROVIDES OUTSTANDING NON-AQUEOUS FINISHING TANNINS
PROTECTS THE FLAVOR, AROMA & COLOR OF LOW SO2 WINES
Structan has been developed as a finishing tannin the same raw material used for making barrels.
The same congeners found in a new oak barrel are found in Structan with substantially improved consistency and concentration, contributing to a more efficient and effective result when used in wine production.
Structan is a powerful natural stabilizer, colloidal integrator and structuring agent. When added in wine production, Structan improves the quality of the end product, imparts wood character and delivers a more balanced and refined wine.
150 year old oak trees are able to avoid rotting, breaking down and spoiling in all types of harsh conditions from hot and dry to wet and cold.
It is these same characteristics that allow our wood-tannin extract to provide a natural potent stabiliser in wine.
These congeners and phenolics contained in the oak are powerful antioxidants that assist in protecting your wine. They scavenge neutralizing oxidant reactions before they can affect the wine, strengthening the phenol and protein bonds to produce more resilient molecular structure in the wine without changing the appearance, taste and aroma.

WHAT PEOPLE ARE SAYING
We are required to adhere to very strict regulations in the countries where we supply our beverages. Stoak’s products not only preserve and protect our products, under very harsh climate conditions in some instances, but also provide the aromatic and flavour profiles of well-rounded oak-aged products.
We have completed our trials with Stoak’s Structan finishing tannins and the results were very good. We have been using wood shavings in our processes to date but believe the Structan finishing tannins are easy to apply with great results
We used STOAK liquid tannin during our 2008 harvest to
solve smoke taint on our Sauvignon Blanc grapes caused by nearby fire.We treated the grape juice after crushing, after settling the smoke taint was reduced to such an extend that we could use the juice for producing quality wine.
We used Stoak’s concentrated Oak extract during our 2015 harvest as part of our remedy to address and solve the possibility of smoke taint on our red wine grapes affected by extensive fires in 2015.
The wine was of very high quality and ready for bottling.
DEVELOP
WINE
PROFILE
Structan is used to structure, develop and enhance the natural flavors and aromatics in your wine and bind to anthocyanins to improve color stability.
Structan imparts the typical organoleptic senses usually derived from barrel maturation and is composed of Gallo-Ellagic tannins extracted from French and American Oak.
BLEND
OUTSTANDING BALANCE
The addition of Structan limits astringency, increases mouth feel, gives structure and stabilization of flavor, aroma and color.
The structuring of wines is consistent in every process, which allows precise control over flavor, color and aromatics, sustained year after year.
SO2
REDUCTION
There are very few wines that are made without some use of SO2. This is because wine is perishable, prone to oxidation and the development of aldehyde off-odours.
Wineshield provides a real solutions to the reliance on SO2, including health, taste, natural and organic benefits.
