Well simply put many distillers we work with struggle to fund the cost of continuous barrel replacement, we all know that you get the maximum value from the first fill and even in some cases a first fill barrel doesn’t deliver the same level of maturation, color and smoothing of others. At over $1000 per barrel the costs begin to add up quickly. Barrel rejuvenation is an option but this still comes at a cost and with reduced overall results over time. One can also only rejuvenate so many times.
The answer is in your blending process, once cask maturation is complete there is an opportunity to use WLT to compensate for diminished ageing and character the distiller is looking for. Addition can be carefully measured and added to dial in the precise and consistent results that come with liquid dosing in a highly efficient format.
