After working with wine for a number of years it was a natural progression for us to move into alternate areas where barrels are widely used for ageing and finishing.
It turned out that one of the wine makers we were working with also distilled the grape spirit into brandy and it made sense for us to look at the impact of our extract in higher alcohols, we were not sure that we would achieve the same results as winemakers were more concerned with delivering finishing tannins and mouthfeel typical for wine, this is quite different to the challenge of a distiller.
It turned out that dosing into higher alcohols most definitely has an impact, the environment was a lot more harsh with the alcohols acting as solvents especially when dosing into virgin spirits, this required us to go back to the drawing board, examine the chemistry and the congeners that are contained inside of the oak extract and work on our extraction process to refine a product more suitable for the ageing, mellowing and smoothness required by distillers.
Once refined we performed a number of real trials for grape spirit distillers with outstanding results in both virgin and blended spirit.
