OUR LOVE AFFAIR WITH BARRELS

For hundreds of years we have used barrels to store a variety of beverage and foodstuffs. Barrels were extremely useful as they were easy and cheap to manufacture, could be moved easily, stored easily and did a good job of protecting their contents.

During storage the oak wood imparted elements of its character onto the stored contents in the form of color, aroma and flavor. There were other elements that also came through, the key congeners contained in Stoak extracts began to deliver rounding, smoothness, maturity and a mouth feel unique to the barreling process.

Modern storage has done away with the use of barrels but barrels are still used to deliver these same properties in the beverages we drink today.

In looking to maintain the flavor, structure, balance and maturity of beverages such as wine and spirits, producers continue to age their products in oak barrels. In the modern age this has its own challenges with expensive barrels, small production batches, large levels of evaporation and most critically the time invested in generating the outcomes that are desired.

With Stoak’s innovative approach to liquify the same oak wood responsible for these characters we are now able to help distillers in managing their barrel replacement and maturation programs, winemakers to be far more precise in profiling their flavors and helping brewers in developing new and innovative product variants.

The process of barrel ageing is subject to large variations in performance and result, influenced by a myriad of factors from the efficacy of the barrel, amount of time, storage temperature and conditions and more.

Stoak’s structuring extracts allow you to precisely control and manage the impact on the end product, it allows for rapid testing and evaluation and can be quantified prior to application in full production batches. This allows for sensory testing, focus groups and assessment upfront.

Blenders and finished product experts are able to exercise far greater control and ensure high levels of consistency from year to year using Stoak Oak Extracts.
