You learn to plan around them, work with them and, occasionally, just accept that they\u2019re going to happen whether you like it or not.<\/p>\n      <p>But when you\u2019re making spirits, there are some things you probably don\u2019t want to leave entirely to chance.<\/p>\n      <p><strong>Oak is one of them.<\/strong><\/p>\n    <\/div>\n  <\/section>\n<\/div>\n\n<section class=\"band\">\n  <div class=\"wrap cols\">\n    <div class=\"prose\">\n      <p class=\"label\">Inside the barrel<\/p>\n      <h2>There\u2019s a lot happening inside a barrel<\/h2>\n      <p>Put a spirit into a barrel and, for a while, your job is mostly to wait.<\/p>\n      <p>But that doesn\u2019t mean nothing is happening.<\/p>\n      <p>The spirit is interacting with the oak. Colour develops. Aromas and flavours change. The character of the spirit evolves over time. It\u2019s one of the things that makes maturation so fascinating \u2014 and one of the reasons it can be so difficult to predict exactly what you\u2019ll get at the other end.<\/p>\n      <p>Because there are a lot of variables involved.<\/p>\n      <p>No two barrels are exactly the same. Even barrels made to the same specifications can behave differently once they\u2019re filled. What was previously in the barrel, how it was toasted, how many times it has been used and how it has been stored can all influence what it gives back to the spirit.<\/p>\n      <p>Then there\u2019s the spirit itself.<\/p>\n      <p>Different spirits, different batches and different strengths can all interact with oak differently. That\u2019s part of traditional maturation, but from a production point of view, it still represents product lost.<\/p>\n      <\/div>\n      <div class=\"prose\" style=\"margin-top:28px\">\n        <p>None of this means traditional oak ageing is a bad thing. Far from it.
